Diabetic Menu

Diabetes is a health disorder where the body fails to produce a sufficient amount of insulin, which is a hormone that converts sugar, starch and other types of foods into energy which we need for our day to day life.  Diabetes can be a serious health problem if it is not properly controlled and treated.  A diabetic menu plays a very important role in keeping a person’s blood sugar levels and diabetes under control as well as living a healthy life.

When it comes to eating, a diabetic does not necessarily need any special diabetic foods as much as he or she needs to eat healthy foods and at consistent intervals.  In other words, eat the right foods at the right time.  This will help to keep an individual’s blood sugar level at the place that it needs to be.  A diabetic menu should contain lots of fruits and vegetables, whole grains, fiber and protein.  Carbohydrates need to be monitored, as carbs turn into sugar when the body breaks them down.  High levels of sugar, fat, salt and alcohol should be avoided.  It is especially important for diabetics not to skip meals and to not over eat at meals or over snack between meals to maintain the right blood sugar level.

One guideline that can be used for diabetic menus is the Diabetes Food Pyramid that was developed by the American Dietetic Association and American Diabetes Association.  This pyramid groups foods based on their protein and carbohydrate content due to the fact that these are the foods that affect blood sugar levels.

Grains and starches are the base of this pyramid and emphasizes whole grains, starchy vegetables and dry beans.  Six to elevens daily servings are recommended.  Fresh fruits and vegetables also play a very important role in a diabetic menu.  Four to six daily servings of vegetables and two to four servings of fruit are recommended.  When it comes to dairy,  low fat milk, cheese and yogurt products are recommended at 2-3 servings a day.  Protein is an important part of the diet, and 2-3 servings are recommended per day.  Fish and poultry is better than red meats due to the fact that it is less fatty.  Sweets, alcohol and fats should be consumed sparingly.

As you can see a diabetic menu is primarily based on eating a healthy diet, with special considerations given for maintaining the proper blood sugar levels.  Diabetics can still enjoy a wide variety of foods and enjoy a healthy, vibrant life.

Diabetic Cake Recipes

Diabetics need to really watch their simple sugar and fat intake as they can really affect one’s blood sugar level and weight.  That is why desserts in general should be only eaten sparingly.  However, there are now diabetic cake recipes available that take into account the special dietary needs of diabetics.  You can find recipes in diabetic cookbooks as well as online.  Most of these recipes use a sugar substitute in place of refined sugar and are low in calories but still taste great.

The good news is everyone in the family can enjoy these desserts and not just diabetics.  They are lower in calories and fat and often replace part or all of the simple sugar and white flour for more healthy ingredients.  You can either find diabetic cake recipes to use or you can try adapting traditional cake recipes by cutting the amount of sugar or replacing it with a sugar substitute and replacing part of the white flour with wholemeal.  You can experiment with this to suit your taste.

Diabetic Chocolate Cake

Ingredients

1/4 cup of unsweetened cocoa powder
6 tbsp of  reduced calorie margarine
1/2 tsp chocolate extract
1 tsp baking soda
2 tsp baking powder
1 cup and 2 tbsp flour
1/4 tsp salt
12 packets Sweet-n-Low granulated sugar substitute
1/4 cup and 2 tbsp of granulated sugar
1/4 cup liquid egg substitute
2 tsp vanilla extract
1/2 cup buttermilk
1 tsp grated orange peel
1/4 tsp cream of tartar
2 large egg whites

Directions:

Preheat your oven to 325 degrees. Spray a bundt pan with a non-stick cooking spray and set aside. In a small saucepan over medium heat, melt 2 tablespoons of margarine and then remove from the stove. Stir in chocolate extract and cocoa. Set aside the mixture to cool. In a small mixing bowl, sift together the flour, baking soda, baking powder and salt and then set aside.

In a large mixing bowl with your electric mixer on medium speed, cream the remaining margarine, 9 Sweet-n-Low packets, sugar, egg substitute, orange peel and vanilla. Beat in the chocolate mixture. Add buttermilk and flour mixture alternately and beat well after each addition.

In a large metal bowl with your electric mixer set at a high speed, beat the egg whites, remaining Sweet-n-Low packets and cream of tartar until stiff peaks form. Next, spoon the mixture into the bundt pan. Bake for 30 minutes or until a toothpick inserted into the center of the cake comes out clean. Cool the cake for 10 minutes. Remove from the pan and completely cool on baking rack before serving.
