Type 2 Diabetic Diet

We all need to eat a healthy, well balanced diet but for diabetics it is especially important.  A Type 2 diabetic diet is actually very similar to what most people should eat in terms of eating a wide variety of natural, low fat foods.  The main difference is that a diabetic has to pay special attention to their blood sugar levels, and certain types of foods may be potentially more detrimental to their health.

A diabetic needs to pay special attention to the carbohydrates they eat.  This is because the body breaks carbohydrates down into glucose, a form of sugar, when they are digested.  They provide fuel that our body needs, but because a diabetic doesn’t always produce the correct amount of insulin too many simple carbohydrates can produce a blood sugar level that’s too high and not enough carbohydrates can result in a blood sugar that is too low.  Simple sugars are found in foods such as fruit and refined sugar.  Complex carbohydrates are found in foods such as whole grains, vegetables, beans, and nuts.  These are digested as a slower rate and provide your body with a steadier source of energy than simple carbohydrates.

Diabetics also have a higher risk of developing other types of diseases such as heart disease and high blood pressure.  Therefore, they have to pay close attention to fat and salt levels.  When it comes to protein and dairy products, low fat and low calorie versions should be selected such as lean cuts of meat, low fat cheese and other dairy products made from skim milk.

Another very important part of a diabetic diet is to eat on a consistent basis.  Meals should be eaten around the same time each day.  You should also not skip meals or regular snacks, but excessive snacking between meals should be avoided.

It is also important to eat a low fat, low calories diet.  Around 1800 calories is generally recommended for a diabetic, with around 50% of calories coming from carbohydrates, 30% from fat and 20% from protein.

Before starting on any type 2 diabetic diet, you should consult with your physician and perhaps a nutritionist or dietitian who understands the health issues that a diabetic faces.  You can also get great ideas for meals from diabetic cookbooks and you can even find free diabetic recipes over the internet.  The main thing is to not rely on junk food and overly processed foods, but eat a wide variety of natural, low calories foods instead.

Diabetic Cake Recipes

Diabetics need to really watch their simple sugar and fat intake as they can really affect one’s blood sugar level and weight.  That is why desserts in general should be only eaten sparingly.  However, there are now diabetic cake recipes available that take into account the special dietary needs of diabetics.  You can find recipes in diabetic cookbooks as well as online.  Most of these recipes use a sugar substitute in place of refined sugar and are low in calories but still taste great.

The good news is everyone in the family can enjoy these desserts and not just diabetics.  They are lower in calories and fat and often replace part or all of the simple sugar and white flour for more healthy ingredients.  You can either find diabetic cake recipes to use or you can try adapting traditional cake recipes by cutting the amount of sugar or replacing it with a sugar substitute and replacing part of the white flour with wholemeal.  You can experiment with this to suit your taste.

Diabetic Chocolate Cake

Ingredients

1/4 cup of unsweetened cocoa powder
6 tbsp of  reduced calorie margarine
1/2 tsp chocolate extract
1 tsp baking soda
2 tsp baking powder
1 cup and 2 tbsp flour
1/4 tsp salt
12 packets Sweet-n-Low granulated sugar substitute
1/4 cup and 2 tbsp of granulated sugar
1/4 cup liquid egg substitute
2 tsp vanilla extract
1/2 cup buttermilk
1 tsp grated orange peel
1/4 tsp cream of tartar
2 large egg whites

Directions:

Preheat your oven to 325 degrees. Spray a bundt pan with a non-stick cooking spray and set aside. In a small saucepan over medium heat, melt 2 tablespoons of margarine and then remove from the stove. Stir in chocolate extract and cocoa. Set aside the mixture to cool. In a small mixing bowl, sift together the flour, baking soda, baking powder and salt and then set aside.

In a large mixing bowl with your electric mixer on medium speed, cream the remaining margarine, 9 Sweet-n-Low packets, sugar, egg substitute, orange peel and vanilla. Beat in the chocolate mixture. Add buttermilk and flour mixture alternately and beat well after each addition.

In a large metal bowl with your electric mixer set at a high speed, beat the egg whites, remaining Sweet-n-Low packets and cream of tartar until stiff peaks form. Next, spoon the mixture into the bundt pan. Bake for 30 minutes or until a toothpick inserted into the center of the cake comes out clean. Cool the cake for 10 minutes. Remove from the pan and completely cool on baking rack before serving.

If you are a diabetic, having a diabetic menu is very important. If you can get a free diabetic menu planned for you it’s even better.

Keeping your diabetes under control is very dependent on you selecting the right foods to eat. You should avoid foods that are high in calories, cholesterol and glucose.
